This recipe, quinoa stuffed peppers are Mediterranean-style. They are stuffed with fluffy quinoa mixed with herbs and pistachios with a spritz of lemon juice and a sprinkle of feta cheese. Clean wash the peppers and cut them into halves, lengthwise. Remove the seeds. Place the peppers on top of a Lined baking sheet with parchment paper.
