Marble Yogurt Cake
A Marble Yogurt Cake has swirls of both vanilla and chocolate. It is perfect for those occasions when you can’t decide which type of cake you want. This is a wonderfully moist single layer cake. It is really good without the Chocolate Ganache so you could just dust the top of the cake with powdered sugar or unsweetened cocoa powder. The cake can also be garnished with chopped nuts (pecans, almonds, walnuts or hazelnuts) or chocolate sprinkles. Yogurt makes this cake nice and moist. This batter also contains a flavorless oil (like vegetable, corn, sunflower, canola or olive oil) instead of butter. The oil, along with the yogurt, gives the cake its moist texture, plus it will keep the cake from becoming too firm when stored in the refrigerator. This cake is excellent plain, but try it with the Chocolate Ganache, which is simply a rich and creamy combination of semi-sweet or bittersweet chocolate with a little butter and heavy cream.
Chocolate Chip Scones
Chocolate Chip Scones make a very tasty breakfast treat. These scones also contain sweet dried red cherries which I think pairs nicely with the dark chocolate chips. The best way to make scones is with buttermilk, instead of the more traditional cream. Buttermilk gives these Scones a light and tender, almost bread-like texture. The scones are baked in a fairly hot oven which gives them a golden brown and crisp outer crust. If you can enjoy these scones the same day as they are made, preferably shortly after they come out of the oven. Chocolate Chip Scones can be made using regular chocolate chips or you can cut up your favorite chocolate bar into uneven chunks. While the recipe calls for dried sweet red cherries, you could use dried cranberries or there are many other dried fruits that could be added to the dough. Dried raisins, apricots, prunes, figs would be nice, or you could leave out the dried fruit completely.
Unlike a fruit pie that has a top and bottom crust, this Strawberry Tart has only a bottom crust of pastry. It uses a butter pastry which gives it a wonderfully crisp and crumbly texture. Wonderful with a scoop of vanilla ice cream or a dollop of softly whipped cream. This is a free form tart so you don’t need a pie pan, just a baking sheet. Just remember that the butter and the water need to be very cold. Once made, the pastry must be chilled until firm before rolling into a large circle. The tricky part is rolling out the pastry. In order for it to roll out smoothly, without it sticking to the counter or tearing, it has to be at the right temperature. Try to make this tart when strawberries are in season.
It is very similar in looks to a Cherry Clafoutis, only instead of a thin pancake-like batter, the cherries are suspended in a buttery sweet almond flavored batter. It can be served warm from the oven, at room temperature or even cold from the refrigerator. This Cherry Cake has a sponge-like batter that is made by first beating the eggs with the sugar until very thick and light colored. Then vanilla extract and almond extract are added for flavoring, along with some milk and melted butter. Next, a mixture of all purpose (plain) flour and ground almonds (or almond meal/flour) are folded in. A common problem when adding a heavy fruit like cherries to a batter is that the fruit tends to sink to the bottom of the pan during baking. Then, about halfway through the baking time, we pull the cake from the oven and quickly place some cherries that have been cut in half, on top of the partially baked cake.
Lemon Blueberry Bread
This rich and buttery Lemon Blueberry Bread is bursting with juicy sweet blueberries and brushing the top of the freshly baked bread with a hot lemony glaze, not only infuses the bread with a nice citrus flavor but it also makes the bread wonderfully tender and moist. Lemons have the ability to bring out the best in any fruit they are paired with. This batter calls for lemon zest as this is where the lemon hides most of its flavor. When folding fresh blueberries into any batter use a light hand so they don’t crush and stain the whole batter blue. Tossing the blueberries in a little flour helps to prevent them from falling to the bottom of the bread during baking. You can also use frozen blueberries.
